Mother’s Day is right around the corner. Crazy right? Weren’t we just here?! I have such a love for all the spring holidays coming up, basically any excuse for a good brunch! I’m so excited to share two brunch recipes that are simple to make, use similar ingredients, and can easily be prepped ahead of time. The biggest perk? They’re kid-friendly. My boys were personally super impressed with both recipes and couldn’t wait for more—I will be adding these to our meal prep lineup more often!

For today’s recipes, I used the Small Baking Sheet and the 12-Cup Muffin Pan—both of which are not only non-toxic, but also non-stick (my muffins do not even need liners, they pop right out!). Plus, easy cleanup is every mom’s dream.
Below are two easy-to-make recipes that are sure to become repeat favorites all spring!
Muffin Ingredients:
10 slices of French bread, cut into bite-size pieces, about half of a loaf
4 eggs, whisked
1 cup whole milk
1 cup heavy cream
1 tbsp vanilla extract
1 tsp cinnamon
½ tsp unrefined salt
3 tbsp maple syrup
Icing Ingredients:
4 tbsp cold butter
1 tsp cinnamon
2 tsp maple sugar
Directions:
Whisk together eggs, milk, cream, vanilla, cinnamon, salt, and maple syrup. Add to bite-size bread pieces and soak for at least 10-15 minutes. Scoop mix into muffin pan (should yield 12 muffins).
Mix your icing ingredients into a butter and add about a teaspoon to the top of each muffin. Bake at 350°F for about 20-25 minutes. Enjoy immediately or store in an airtight container in the refrigerator. Serve warm and add maple syrup when served.
Ingredients:
2 slices of French bread, cut into bite-size pieces
6 eggs, whisked
½ cup heavy cream
½ cup whole milk
1 tbsp Dijon mustard
1 package of ham of choice, sliced into bite-size pieces
2 cups cheddar cheese, shredded
½ tsp garlic powder
¼ tsp unrefined salt
Pepper to taste
Optional: chopped green onion
Directions:
Whisk all ingredients together except the cheese. Add the egg mix to a 9x13” sheet pan, then sprinkle the cheese over the mixture. Bake at 350°F for about 40 minutes, until a slight golden color on top. Add green onions if desired, and enjoy! Store in a container and refrigerate leftovers for later.
